Looking for a burger with a twist? These Vietnamese-style burgers are packed with flavor thanks to the use of fish sauce, lemongrass, and oyster sauce. The combination of sweet, fresh, and savory makes this dish an absolute hit on the barbecue or from the grill pan. Serve with sriracha mayo and pickled vegetables for the ultimate taste experience.
For 4 burgers
640 grams of ground beef
50 grams finely chopped shallot
20 grams of finely chopped garlic
40 grams of finely chopped lemongrass
15 grams spring onion / 2 spring onions, finely chopped
1 tbsp Premium fish sauce
2 tbsp oyster sauce
2 tbsp granulated sugar
1 tsp. black ground pepper
In a large bowl, combine the ground beef with the finely chopped shallot, garlic, lemongrass and spring onion. Add the fish sauce, oyster sauce, granulated sugar and ground black pepper to the ground beef mixture. Knead the mixture well so that all the ingredients are evenly distributed.
Divide the minced meat mixture into eight equal portions (80 grams per hamburger) and form into hamburgers. Make sure the burgers are slightly larger than the buns, as they will shrink during baking.
Heat a grill pan or barbecue to medium heat. Cook the burgers for about 4-5 minutes per side, or until cooked to your liking. For an extra layer of flavor, you can place a slice of cheddar cheese on top of the burgers while they cook to melt.
Serving suggestion:
Serve the burgers on a bun with sriracha mayo, pickled vegetables, cucumber, cilantro and red pepper. For extra umami: drizzle a little fish sauce dressing over the burger just before serving.
