Made from dab (Limanda Limanda), a North Sea bycatch fish that has been valued for generations in Urk for its refined flavor. Schar Reserve 2023 is traditionally fermented in the Vietnamese way over an extended period, resulting in a rounded, elegant and complex taste with a subtle natural sweetness.
